Hi everyone, I have been looking on the site for tips on smokers for a while and just decided to join. I'm not a beginner when it comes to BBQ but I just finally bought an actual smoker. I'm a chef from Colorado and have been cooking and making BBQ on my Weber and in commercial kitchens for years. The smoker I went with is the Oklahoma Joe Highland. Seems nice. I still haven't assembled it. I'm waiting on RTV and Loctite so it all stays together. Any tips for this new toy would be greatly appreciated! Thanks.
