Hello, SMF. Checking in from Chicagoland. I'm a weekend warrior with a Big Green Egg (6 years) and a Solaire infrared grill (10 years). Justin is my nickname. I'm planning to make Wood Chick's smoked beef brisket this weekend, which I've done before with tasty results. I also like to make pork shoulder Carolina style with vinegar sauce. Cheers.

Here  is the pic I promised to post.  Boston pork butts 5.75 lbs. each. After 10 hours just before I foiled in Captain Morgan rum and apple juice. I took 4 more hours to get them up to 205°. The pulled pork was better than awesome...
