Didn't take me long to do my first Fattie. I had the hardest time deciding what to put in it. I went basic first, just cheese and onion.

I got frustrated rolling it all up. We don't have those jimmy dean type sausage here so I just used 2lbs ground pork (used large ziploc bag idea even though not in picture) and added some sage, cumin etc... (2 lbs sound right)?

The final product was really good. Used Maple wood chips. I have so much room to improve and welcome any advice.

Just curious, when I use a zip-lock my meat comes out perfectly square, did you cut one of the corners off the ziplock and use a rolling pin to get it evenly in the bag. Despite the shape, it looks really good! Be careful they are addicting?
 
At first I used suran wrap and my hands to flatten like shown of photo. didn't work, so I then used the freezer bag method. no photo of change.
Had a heck of a time rolling though. guess I need to do it again
