hi all... new guy here... after exhaustive research and recommendations of a good friend... i am currently securing the funds to get me a mes 40... my question is... i also wanna get an amazin smoke generator... will the larger one fit in the 40?... where do you put it in the 40 when you hot smoke... and when you cold smoke... and how long does a 1lb bag of dust last?... i was gonna get the bradley but didnt wanna get stuck having to buy their bisquettes... will getting the amazin be the same thing... will i be a slave to having to buy tons of this dust all the time? any help is greatly appreciated... thanks

Welcome Larry, I'm not familiar with the 40,but their are many people that have them on this site and will answer your question fairly quickly. I just wanted to say "Hello" and "Welcome" to the SMF....
 
I have a MES30.  There are several places I can put the AMNS, but with the MES40 you will have a choice that I do not.  There are two rods that go across the bottom of the device and are involved in securing the cover for the chip pan assembly.  From looking at the MES40 in the store, you could put either a 6x6 or a 6x8 on those rods -- to the left of the chip loader assembly.  Neither of them will quite fit in the 30, but are just fine in the 40.

I'd think that would be a good place for either hot smoking, adding additional smoke, or for cold & warm smoking.

I think that I get about two 6-8 hour smokes out of a pound of sawdust.  Others here may have measured it more carefully.  When you are doing a hot smoke, you can use wood chips in the loader pan, although several folks have gone to using only the AMNS for hot smoking.

Welcome to SMF. not sure how long a pound of dust lasts, but it lasts a long time.  A lot more the 6-8hours.  that is how long the AMS will smoke when full.
 
I have the MES 40 and the AMNS. They are both great. Dale was correct on where the AMNS goes. I have the 6x8 AMNS. I use the AMNS for cold smoking and long hot smokes. Other wise I use chips and chunks in the MES. The more I smoke the more I realize what the best wood is. It is free wood.

Fyi, you don't have to have smoke for the full cook either. Sad but there is such a thing as too much smoke. Like I was telling you, the 3-2-1- method for ribs really only needs the first 3 hours of smoke, after that it's all about finishing the cook.
