I recently retired from the telephone company, looking for something to do. I thought that I would build a smoker. I happened upon this site, I am hooked. Been nosing around for a couple of weeks. I built a 35gal. UDS. I have done ribs, a fatty and achicken.
A question that I have, which I could figure out myself is, how much temp difference is there between the charcoal basket and the top of e UDS, if any. Also is there a maximum number of grates that would be recommended to use, I havn't figured out the Q view yet. Thanks
