    Hello, my name is Chris, Im a 29 y/o Network Admin. by trade and weekend smoker/BBQ'er.

    Background:

    I have always enjoyed cooking from learning as a kid by my grand mother that passed away when I was 13. To this day I still try to cook/BBQ/smoke anyting new as a challenge. My latest challenge for myself was making Korean short ribs, but I'll get into the "other" stuff later.

    For the past 3 years I have been using a Brinkman electric smoker, this unit has been extremely usefull as a stepping stone in learning the basics about true "smoking". I recently have almost become bored with this smoker and felt that I'am ready for the next level (IMO). So yesterday I purchased the "Char-griller DUO". So this morning I start searching for sites and came across this site.


    Here are some pics as to what I have smoked/BBQ'd:

    This was some "ahi" tuna that I smoked, I marinated it with some olive oil, fresh garlic, onions and salt and pepper:






    we had 2 fillets of the tuna, so the other I marinded w/ teriyaki and just threw it on the grill for a couple of minutes per side:






    On my pork ribs, I have my own dry rub that I have conjoured up and works really well:




    I usually smoke my ribs for about 3-4 hours w/ only the dry rub and then throw em' on the BBQ for about 5-10 minutes, at that time I apply the BBQ sauce:






    And here are the "Kalbi" style korean short ribs that I made a couple of weeks ago:

    Hi HI, Some good looking grub on that smoker/grill. You might want to check out the charcoal and wood smoker forums for the mods folks are doing to these smokers to even out temps. Working on a new Char Broil Silver myself.

    Thanks for the welcome, I will def. be visting that area, thats the main reason I joined, to get tips on the new BBQ/smoker. Coming from an electric smoker to a fire smoker is gonna take some time and know how.

    Almost forgot, my hobbies are of course, cooking, spending time w/ my 16 month old daughter, riding a sport bike (02 Suzuki GSXR 750)...riding quads (01 Yamaha Banshee).....off roading (06 Chevy Silverado lifted 6" w/ 35" mud tires) and

    Oh my!! LOBSTER MMMMM.
    Smoked fish is about the greatest thing ever thought up.

    But I keep going back to the LOBSTER pics mmmmmmm. Looks great

    Welcome to SMF "HI". Glad to have you with us. You're gonna love that Duo. Did you get the SFB also? It ain't huge, but does good for medium duty use.

    Welcome aboard...................I have the char-griller Grillin' Pro 3001 with sfb......Pretty much the same as the duo with out the charcoal side......Great to have you here.......
