Current: McHenry Illinois, northwest suburb of Chicago
Smoker: Offset
Model: Oklahoma Joe Highland
Mods: Sealant, Custom Firebox, Gasket, Firebrick used as baffle
Preferred Meat: Babyback/Spare Ribs, Sausage, Glazed Hams, Pork Shoulder
Preferred Wood: Post Oak, Mesquite, Hickory
Years Smoking: 5
Interested in:
-learning how to smoke seafood like shrimp or salmon
-using fresh fruit in sauces or glazes(rasberry, blueberry, etc)
-Bacon wrapped quail
