I have done the mods for my ECB Smoke and grill. Smoked (3) whole chickens at once for the (6) of us. It turned a little dry

because they were (3) hours before it was time to eat. But i did rap them in foil and a towel then into the cooler. Still learing.
 
Tang welcome to the site. Ive been cooking professionally for 10yrs, and getting really into smoking for last 2. I can tell you coming to this site opened my eyes and made me realize i didnt know as much as I thought I did. There are many posts and member to get great tips from. If ou havent done it yet your should definately take the 5 day smoking e course the site offers that alone is a such a big help. Good luck keep us updated with pics and if you have any questions dont be afraid to ask around!!!
