Hi all, just bought a new Smoke Vault 24" model and very excited to try smoking meat. I assembled the smoker, but that is as far as I have gotten. I am going to break in the smoker this weekend and start smoking after that. I havent gotten a good dual probe thermometer yet so any suggestings would be helpful, I am leaning toward the Maverik model. I really have no idea what I am going to cook on the smoker, I have smoked pork and beef on a gas grill before so I have some idea what to do. I have lots of questions and will look through the forums for the answers. I do have a cast iron smoke tray with a slotted lid, should I use that inside the smoke tray or just fill up the smoke try with chips and then cover the tray with foil?  Any advice for the break in of my new Smoke Vault is appreciated.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

to SMF!  We are so glad you joined us! Would you mind updating your profile to show the other SMF members where you are located?  Might meet some neighbors!

I own the same smoker that you have.  I love mine and can do anything I want with it.  Good luck with yours!

We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Hello, fellow Canadian! I am from BC but will be driving through Saskatchewan at the end of the month to watch the Lions play the Bombers in Winnipeg. 

You will love this forum. There are many great posts with information and the experienced members are very kind about sharing their experience.

However, I do warn you, smoking is addictive.

Welcome to the forums!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
