A friend and I have been smoking a few years now experimenting in Lethbridge AB. Between the 2 of us have a Bradley 4 and 6 rack and recently acquired a barely used Green Mountain smoker that is proving to be be very good. Slowly getting serious about learning this craft, a great way to makes ourselves and family very happy. Cheers!

Thanks for the warm welcome, just over 70 deg today and sunshine. I smell like a walking smoke pit at the moment, been smoking a venison roast today. Shoved a couple thick slices of apple smoked bacon inside and rubbed and let marinate in a couple bottles of amber ale. Started on the Bradley with some apple and cherry, put a tray of charcoal inside but gets hot to quick. Wanted to see how that worked so moved it into the BBQ with big tray of charcoal trying to maintain 220deg.
See how it goes, cheers!
