Hello! Just like all the rest, I am pretty new to smoking. I am borrowing my dad's 30" Masterbuilt for the time being. My first smoke - I took a pork shoulder, injected with apple juice, then rubbed with yellow mustard and dry rub. The dry rub I am using is Weber Coffee Rub mixed with some brown sugar. wrapped it up tight and let sit over night. Tossed it in the smoker using apple chips at 225 degrees for 12 hours. Came out great for my first time. (at least I thought so)

My second attempt was at salmon. All I did was sprinkle a little brown sugar over the fish and then used Jack Daniels wood chips at 200 degrees until internal temp reached 145. I thought this came out well, too. But next time I want to try brining it first.

I also just picked up a 30" Masterbuilt smoker with Bluetooth from Wally World for $130.00. Reg, $279.99. Not sure if I want to keep it, I am reading a lot of bad reviews regarding heat jumping around and poor quality. Any feed back would be greatly appreciated!

Hope your smoker works fine for ya. You probably won't see as many people commenting on how much the like their masterbuilt 30 but they outnumber those with troubles I bet. You get to know how to work around temp fluctuating and it usually gets settled in .. I was thinking of getting one too..
