Because I am always looking for new things to smoke, new recipes and such, I found this forum while searching for Chicken Sausage! Yes, I have found a new pastime to enjoy, as I delve into the world of short smokes, and the various sausages that I can get and smoke in my large Big Green Egg. We got tired of buying a new grill every 3 years, and decided to drop a few dollars on an egg (although, it really looks more like an avocado if you ask me... maybe Big Green Avocado doesn't have the same ring to it?), and it has changed my approach to food.
Anyway, I've only been smoking meats since July, and I've been through easily 100 pounds of pork butt, a few briskets, lots of chicken, reverse sear on steaks (the only way to grill a 2" ribeye!!), and I'm always looking to learn new stuff. Our local Harris Teeter had a big sale on various store made sausages, of which the chicken sausages are top notch. I like the sweet Italian chicken sausage as well as the Chicken & Basil sausage, but the lamb sausage, beef and seafood sausages are good too! Yeah, I have even thought about making my own sausages. So much flavor packed away in such a small bite.
