Hey everybody! I am glad to find this place!!
I am new to smoking....almost. I did a ham for Christmas a year ago and it came out really good. I had absolutely no idea what I was doing. So I figured I would try it again with a new bbq I got when I bought my first house this year. Tomorrow I am doing a pork sirloin (asked my wife to get the butt, but the sirloin is what I got), and I want to do it pulled. So I am going to do it with Kingsford Mesquite charcoal in my 55 gallon drum bbq. I also have apple wood soaking right now I am going to use in the morning. My sirloin will have a good helping of garlic (no cholesterol issues in my house!) with apple slices and juice injected. The rub is home made with brown sugar, rosemary, salt, pepper and cloves. I am wrapping the piece in thick apple beacon. I am using one of those hard tinfoil throw away basting pans you get at the store and will be wrapped in tin foil. In the bottom of the pan I am adding more apple juice mixed with KC masterpiece maple and brown sugar sauce. I plan to start the coals around 7am and hopefully eat it around 2 or 3 in the afternoon. Let's see how it goes.
