Hi everybody, today was my inaugural smoke with my new Horizon 16" (full review to come later). Yesterday I seasoned it up, so today was the first smoke. I went with pork spareribs and threw in some CSRs as well just to test it out. I didn't have high expectations since I'm learning the controls on this new smoker, but it came out great! I used a 3-2-2, and I think I ran a little hot early on, but no complaints for a first try. It was really windy here in Portland so I had my hands full with the temps. I used cherry wood which really created nice color and flavor. Here's some pics: I went with Tulsa Jeff's rub, and his sauce as well. Both are great, the sauce is incredible and I highly recommend it. Below is taken after two hours, the right side is closer to the firebox and you see I overdid it a little early on... The finished product. The rub created a nice bark, maybe a little more than I'd like but I think I was a little over 250 the first hour. Very tender on the pull-back. Ready for the sauce. They really were delicious! Got a smoke ring too!
