Hi to all of the forum members out there! My name is John, I live in Holmes NY (soon to be moving to Colorado). Have been smoking with my Big Green Egg for the past 5 years or so and love it. Recently got into charcuterie. Made a couple of pancetta, maple bacon (I will never buy store bought bacon again) and a couple of pates. Will tackle sausages next after I buy the right equipment.
