Looks like a super site packed full of information. Smoked my first racks of ribs yesterday on a Big Green Egg and they turned out pretty good. Will give the 3-2-1 method a go next time to see if I can improve on them. Used a dry rub and then placed in grill for 5 hours at 230 - 235 degrees for 5 hours, ribs came out moist and flavorful.
