This has been a great forum so far.  Just looking around has given me a lot of great ideas on a new build I started recently.

Came across a stainless steel two-chamber food warmer I'm customizing.  I haven't been able to ID the make and model so winging it on replacement parts.
 
Sounds like a plan with the warming box

Going to throw up some pics soon.  I've got two sides set; one for cold-smoking temp max is 190 on that side; updated the element on the other side for higher temps. Going to use a smoke daddy on each side.

Ok, didn't realize how raggity this thing really was; yes it "heated", but the slime and grease from years of commercial kitchen use was unbelievable. All the controllers are burnt out; indicator lights etc. This should be interesting....
