So got my new offset picked up Friday afternoon. Craig at Bellfab is great to work with. Got his basic model, with some tuning plates. Fired it up when I got home, started seasoning it with some vegetable oil, couldn't resist not cooking something. So had a brisket flat that had been sous vide for about 30 hours. Only had it on for about and hour and half-two hours. Would have liked longer but was getting late and my brother and I were hungry.

Really liking the new offset. Going to take some getting used to. Much different than the Char-Griller or obviously my MES40. Got a buddy that does some tree work, so will eventually get some oak splits, now just charcoal and chunks. Very excited. :yahoo:

 
Congrats, jirod. I'm glad you finally got it. I know you will enjoy the Bell. What's not to like. Craig is a great guy and I really like mine. He just needs a little more exposure. His product is awesome.
