Hey guys, my name is Paul, I am 28 and live in Staten Island, NY. I am new to smoking meat. Last year a friend of mine caught my ear and told me how he smokes all this meat, so i gave it a shot. I went out and purchased the cheapest smoker I could find. It was the Brinkman Smoke and Grill. I made 2 10 LB pork butts. Even though they came out delicious, I had too hard of a time keeping the temps low and consistent as I went through a whole bag of charcoal. Needless to say i was discouraged and that was the one and only time I used that smoker. That was last year. This year i said to myself I was gonna give it another shot. After doing much research I went out and purchased a Weber Smokey Mountain 18". I am very much looking forward to getting this smoker going. This past weekend I seasoned it, and in the upcoming weekends I will be smoking some meat. Anyway, I look forward to using this forum often for some ideas.

Welcome from SC, Paul. It's good to have you on this great site. I know you will enjoy your WSM. I had one for several years and it produced some really good product.
