Hi all
Lurked here for a bit. I have a old New Braunfels vertical smoker that I nearly gave up on because it didn't have a thermostat and seemed like a pain to work. Good buddy of mine has a BGE and has been making ridiculous Q the last year so I gave up. Recently I drank a bunch o beer and watched a marathon of BBQ Pitmasters. Said "to he'll with it, lets try it again"

Installed a thermometer and read abunch on this site. Made 2 slabs of St Louis ribs last weekend that were the best I had ever made thanks to some of your tips. My buddy with the egg was floored. Smoked the spare ribs at 250 for 2.5hrs, wrapped for 2 with a combo of Mixon's rub and Johnny Trig's wrap. Loved it so much I took today off and am trying another round.

Thanks for sharing the knowledge and the wealth of info on here. I'm hooked and can't wait to spend the summer smoking.
