Hi all, my name is Jeff and I live in CT. Always wanted to build a smoker on my own but want to learn the science behind it first. I'm breaking into it with a Masterbuilt Dual Fuel smoker. I have searched the web and this forum has helped me in the past so joining it was a no brainer.  I started with a Pork Butt as even the butcher said I wouldn't be able to screw it up. He was right. He also gave me a bit of advice...practice on family. So the following week I practiced with 2 whole chickens and they were awesome. My 3rd week, I grabbed a 10 lb.flat brisket with a coffee based dry rub and Jack Daniels barrel chips. My "avatar" is the result. This weekend is baby back ribs and 2 more chickens and will be practicing on non-family people. Wish me luck!!!
