My name is Rocky my father and I are going to start smoking. I am excited about smoking and it gives me and my father some good time together. I am married with 3 children and a wonderful wife. I am a charcoal man myself I do not even own a gas grille. We did decide to do an electric smoker. This decision was made after reading about smokers and my father and I decided electric would be a good place to start. Electric seemed to be the easiest way of smoking. We have never smoked anything so we are going to take it slow learn some things, have some fun and eat some food. The hope/desire is to learn and do enough to also smoke with the conventional wood burning smoker. 

We are using the 6 rack digital Bradley smoker (120v ) We have a rack of spare ribs in the smoker now. (EXCITED hehe ) I look forward to learning and meeting people.

Hello Rocky and Rocky's Dad and welcome to the fun.  As I read between the lines I am pretty sure you aren't as NEW as you think you are.  Charcoal only and such.  I DO hope you mean lump wood and not briquettes.  If briquettes,  STOP THAT!

 You will LOVE the addition of the smoke.  Vary your woods and experiment to find what you like best.  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  The trial and error method works well.  We will try to help you keep the errors to a minimum since we already made them for you.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
