I got a smoker for Christmas, masterbuilt gas smoker. I attempted to go through the initial set up and cleaning process and I could only get the chips to smoke for a short period of time before they would catch fire. So I attempted soaking the chips for about 5 hours before putting them in the smoker with it turned to low and the chips only lasted about an hour before they were completely burnt out. I have absolutely no idea what I'm doing and need help from start to finish. I have no idea how to make my chip last for hours, let alone how to smoke meat for hours on end. open to any and all advise everyone out there has to try and get me smoking!! Thanks in advance for the help.

The bad thing about chips is they won't last long and you he's to add them frequently. One of our sponsors here Amaze N Smokers sells a pellet tube smoker that works great in a propane smoker. Todd just came out with an expandable version. I have used the tube (AMNTS) smokers in my propane smoker for years. They will smolder perfectly with pit temps up to 285. Higher than that the pellets will ignite. Check them out.

If you don't want to go that route try using chunks. (2-3) 2"-3". Place in your chip holder. You may need to use a propane torch to get them smoldering or place 1-2 lit briquettes in with them. Do not soak the chunks you want them dry. I suppose you could also use dry chips to get the chunks smoldering.

Almost forgot, the AMNTS allows you to cold smoke too. The last photo is a batch of cured pork belly that I cold smoked.
