Todd from Houston, TX. Never smoked before, bought a MES #20070111. Seems no one has this model yet. Found it at Sears for $100 shipped. Im hoping since im in Houston where it can practically be as hot as a smoker outside, that this uninsulated model will work for me. I notice people tend to buy the insulated models. I know 0 about smoking. I just learned a little about the mailbox mod and the pellets. The pellets for cold smoking, I will wait to do that later. Waiting for the unit to arrive and will season it. Will see what this smoking culture is all about. All I know is everyone who comments about owning a smoker says it was the best thing they ever bought. Heard this way too many times!

Good evening and welcome to the forum, from so so day here in East Texas. Lots of great people with tons of information on just about  everything.

Welcome aboard Todd, and welcome to a very satisfying pastime.  Congratulations on your new smoker.  I am not personally familiar with electric smokers, but my 18 inch Weber WSM is uninsulated and I haven't had trouble with it not being insulated.  I do use it in the barn, though, and that will make a difference.
