Never going back to a thin metal unit. Proof is in this pic.

The cheap Oklahoma Joe unit that I modified the crud out of just wasn't worth it after cooking on this. Maintaining the heat was an absolute joy on this guy. The thin metal just doesn't cut it. Looking forward to getting an extra rack added to this Old Country Pit. This picture is a 15 pound brisket after 9 hours. Went another 4 hours crunched.

Nice looking cooker. The Old Country's are probably the best value for the money out there. The only mod that I think they need is an Horizon type convection plate and maybe a charcoal basket.

Good luck with it and keep on smokin', Joe

Joe,

I have to agree with you. It is a very good value. I am going to use tuning plates. I had that plate for the OKJ and it was ok but limited on what I wanted. My new smoker has a baffle already built into it. The unit I have is an older model of the brasos. It is only 16 inch. but it is built better than the newer models. Mine is brand new never used and was already 5 years old. The bottom shelf is expanded metal and steel frame, the firebox is the same size as the current one for the 18 inch(most likely why it cooks so well). My unit also came with a very heavy duty thick expanded metal and steel charcoal grate. And the wheels are larger. If I can get this guy an extra shelf or two, I think that is all I need. I wanted to go with an 18 inch unit later on but I think this one will do with internal expansion. My next one will be a 20 inch for sure. My wife is telling me to now keep the OKJ so I will not go buying a new one. She said I can turn it into a pellet unit instead of buying another stick burner or pellet smoker.

That sounds really good to me. You're on the right track. If you ever decide to get another smoker, please check with Craig Bell at Bell Fab in Owasso, OK, just above OKC. Craig is a great guy and very easy to work with. He builds a one off smoker to your exact specifications and you personal wants. The quality of material and fabrication is first class and his pricing is most reasonable.
