I've been smoking on my old heavy faithful stick burner for a few years now ,recently I bought the wife a used traeger 075 lil tex. It has new hot rod and auger assembly and I just installed the new Ortec digital controller. We have done burgers and brats and steaks all with great results ....BUT today I decided to slow smoke some ribs with the 321 method and the temps were all over which meant crappy ribs set rig at 225 highest temp was 375 and lowest was around 115 !!! My maverick also agreed with these temp readings. HAVE I JUST FOUND A NEW BOAT ANCHOR?
Any tips would be great
 
That's some pretty wide temp swings...sorry to hear about your troubles!  I don't know a lot about those Traegers or that new controller...have you considered calling Traeger's customer service line and seeing if you can get some tech support?  Regardless, I'll give your question a bump, and maybe some Traeger owners will offer their 2 cents...

I too would call traeger. I do not have a traeger but I know pellet cookers, as a whole, are very consistent with their temps.

I've had the same problem with my SmokeDaddy hopper but I haven't ruined anything like ribs or butts yet. I've been so busy I haven't had a chance to call Dennis yet. He's a great guy so I'm sure he'll take good care of me when I do call him.

I have a Traeger lil tex elite. Have had it almost a year now without any problems. I find that the temp on the digital readout and the analog temp on the door are about 30 degrees off. I just use my own probes in the meat for a good reading. I have had nothing but great results with my traeger.

I'd do like the other guys say and call customer service.
