I have made ABT's a number of times and always did them the same way.  1/2 pepper filled with cream cheese with my rub mixed in 1/2 dove breast wrapped in beacon. Everyone loves them and says they are grate.

The thing is I hate cream cheese. As a result I never get to eat any of them. My question is has anyone tried stuffing them with something other than cream cheese?

I've stuffed them with all sorts of things: other cheeses, mixes of ground meat, cheese, bread crumbs, rice, chopped ham, deer sausage -- the sky is the limit!  Think stuffed mushrooms or bell peppers.  I've found the cream cheese to be too gooey for my taste, but I still like it!  Hard to screw these up, so be brave and creative.

I'm thinking about doing a batch with refried beans.  Haven't done it yet, so I don't know how it'll turn out.  If you do it, I recommend making your own refried beans from scratch as it is a universe away from the canned version.  You might also try chorizo sausage or taco-seasoned hamburger.

Let me know how it works if you try it.

EDIT:  I forgot to add that one can get creative with refried beans too.  I make mine from beans I've cooked in a puree of onion, garlic, mexican oregano, and about a lb of roasted chiles (usually Big Jims from NM, but poblanos are good too).  Sort of like refried Ranch beans.  I think it will be a good way to get a lot of flavor into the ABTs.

The ABT's world is in your hands. The japs are just the vessal. If you don't like the cream cheese you can use anything you can dream up. I think that they should have some kind of meat in them be it shrimp, pork, beef, game meat. You can use any cheeses or no cheese at all it is all up to you and your imagenation
 
Sautee some onions and peppers . Pull out some smoked brisket.

 Chop it all fine . Stuff the japs. smoke.
