I am smokin' a beef roast, the temp is at 160, if I wrapped in foil and put in a cooler for a ahwile will it be o.k. to slice?

Yes, it's well done, but by wrapping and resting, you should save some of the juice. It won't pull until 195-200.
 
A beef roast yes it will be fine I actually do mine to a lesser temp
 
Slice like for sandwiches or for dinner? If you like well done beef you will be fine. What kind of roast is it?
