Excited to cook on my uds today.  throw 2 racks of bb's on with mav showing 228.  Was planning on 2 2 1 and after the first 2 i go to foil and they dont look done at all.  so i put the meat probe on the grate and apparently my pit probe is bad as its running 20 degrees off!  foiled the ribs and into the oven ar 250.  im planning to leave them in the oven and get smoker at propper temp then back on for the last hour.

my question is should i leave them at 250 or go higher since they are alot less done than usual.

Personally for us we do the last part on the smoker or grill at high heat. I usually do 3-1.5-.5 with the last half hour at 325-350 with sauce on the ribs to put a nice crust on them.

You can continue the way you are...Put them back in the Smoker the last 30-60 minutes until the desire tenderness and if you want more color, the Grill or Broiler will do the trick...JJ

yeah they are going back on the smoker.  i just did the second part in the oven to get the smoker up to temp.  time to take them out of the oven now.  we'll see what they look like.
