Excited to cook on my uds today. throw 2 racks of bb's on with mav showing 228. Was planning on 2 2 1 and after the first 2 i go to foil and they dont look done at all. so i put the meat probe on the grate and apparently my pit probe is bad as its running 20 degrees off! foiled the ribs and into the oven ar 250. im planning to leave them in the oven and get smoker at propper temp then back on for the last hour. my question is should i leave them at 250 or go higher since they are alot less done than usual.
