Need help now cooking a butt QUICKLY

  1. I'm heading out of town this afternoon. Need these butts ready to go by 5pm. I'm putting them on now. I wanted to start at 7am, but I was up until 4am and slept in (ruptured disc in my back, terrible). Anyway, I really just want to give them a few hours of good smoke and then foil em, and take em with me and finish in the over when I get there. It's about a 1.5 hour trip. I'm doing them on my new Master Forge double door propane. Smoking with hickory and apple. Temp between 230 and 250. Will I be able to get some good smoke for a few hours? How high do you think I'll get the internals up to in that small window? Oh, fyi, it's just two butts, pretty small, about 4.5 lbs. a piece. All I could find on short notice from the Bi-Lo. Thanks, brothers.

    You need to get them past the 140* mark to be on the safe side. Thats 140* Internal Temp. within 4 hours.

    You will get plenty of smoke on them in 5 hours. The thing I'm not sure of is once you get it above 140 degrees, I think you have to keep it there until it's fully cooked. If you get it to 150 & wrap it tightly in foil with a little hot liquid, then wrap in towels & put in a dry cooler, it should stay at 150 or above for a couple of hours, then you could finish it in the oven. Hopefully one of the food safety guys will see this & respond.

    Make it the last thing you load and have it foiled wrapped in towels and ito the cooler.

    Should be ok..

    Sorry you are feeling bad...I sure as heck know that drill.

  5. Ditto, just dont let em drop below 140 degrees.
