Need Help For Butt Smoke

I am smoking two 7lb boneless butts today on the CG. Got her started and up to 225, put the babies on and nothing has been right since! They have been on for only three hours and are already 130 internal temp. The hood therm is reading the same as the therm sitting on the inside grill rack...so I can not claim inconsistent heat. The temp is either too high (spikes 300) or too low (200) other than those moments, it sits at 225. What am I doing that my butts are coming up so fast? Thanks in advance for any help:)

some meats just do that..........did you check the meat temps in several areas, just to make sure...........and you may have a stall in your future.....you slicing em, or pulling em.........pulling em, you still have 70 degrees to go.......
 
How's the wind there? That may have something to do with it. If your butts were really close to room temp when you put them on, they'll go a little faster. Just something to throw out there.

I'll move the meat probes around and see what is what. I am getting the impression that things may slow down from here? I was expecting to be out there until 8 tonight, and when they came up in temp so fast I thought I did something wrong!

It is a bit windy but otherwise wicked warm (in the 80's) Grill is sitting right out in the sunshine. I did let the meat come to room temp before grilling, so that could be part of it! Thanks for pointing that out. I used a lot of peroxide in my hair in the 1980's forgive my airheadedness:)

I think you'll be fine. Mine came up faster than I anticipated last weekend. Then it stalled at 160 for 3 hours. It will slow down. Just keep with it and all will be well. 7lb butt took me 13.25hrs last Saturday. Good luck.

I think It will be good now...seems to have slowed down already. Hey, if you hit a plateau at 160 for three hours, at what point did you foil it? I was going to foil at 165. But if you hit a stall at 160, should you foil it then?

Glad things are turning around for you. I foiled at 170, trying to get a little more bark on it. I pulled it off the smoker at 200 and it turned out great. Make sure you let it rest for awhile before pulling.

I am smoking on a Char Griller Pro. Yes, I have a water pan present. I think I just freaked too soon...but that is what you are all here for...moral smokin' support! Of course a few beers and a few shots helps put things back in perspective:) I'll post a Q-View soon.

You have been a source of "chill out" for me and I thank you kindly! Yes, I am going to 200 and plan on tossing my babies wrapped in a towel in a cooler for a while before pulling. I am bringing them to a family function tomorrow, so I will pull, bag, refridge and reheat the bags tomorrow at party in boiling water. Just cooking up the sauce now...yummm:) Thanks dave.

It seems the plateau has arrived! 156 internal on both pieces, and hasn't moved for a while now. Seems I may be here for a while after all...good thing I have lots of beer and my neighbors put on an incredible fireworks show right here on the lake.
