Need catering help

I offered to cater lunch for a friends work next week. What started as 20 people has grown to 100. I am doing 100lb butts (heavy eaters) as well as 4 briskets. I feel confident about The meat but I am struggling with how much sides. I am doin wicked beans and cole slaw as well as iced tea. How much beans and slaw and how many gallons of tea?
 
thats alot of meat. the pork alone will feed about 200-240 people.

beans i figure about 3oz per person so i would use 4 110oz cans which will be 2 full size catering trays.
 
I based pork on half pound person. Figured I would get 60lbs actual meat which gives me 120 servings. These are all factory workers that can eat and my buddy wants leftovers. You think should still do 3oz with these guys?
 
That amount of meat will give the high side of 8 oz Pork and 3-4 oz Brisket per person. That is a lot of meat. There should be leftovers. 1/2Cup Beans (4.46oz) and 1/2Cup Coleslaw (3.37oz), are both BIG portions. Together with the meat that is A LOT of food. I agree with Brian that 3oz (~1/3Cup) per person should get the job done. Get 2 Rolls per person and 2floz per of Sauce as well. For the drinks, I think 24floz per person should get the job done. Use 16floz Cups with Ice. That would give 2 glasses of whatever per person. These guys are going to need a NAP after that meal!!!!...JJ

I am getting meat thru restaurant supplier. I got a case of butts (80lbs) case of briskest 80lbs). Had to order by case. Will keep a few briskest for myself. $1.08 for pork and $3.03 for brisket. I will get 2 rolls per person. There is no portion control so you think 1/3oz on sides will be good? Would it be cheaper to make tea or buy it by gallon?
 
Thanks sticky. What's best way to do slaw. I usually just mix Maria's dressing with the bagged slaw. Is this most cost effective or buy in tubs already made?
 
Do yourself a favor and get prepared Slaw , you're going to be  busy enough with the cooking time... no-one will know , lie

Go back to the Restaurant Supply . Some will let you return unused , un-opened cartons if they are kept cold.

I agree with old school on this. Tea is usually on sale at the supermarket so I would buy that as well. Enjoy!!!
