Need a little help with my new to me stuffer......

I broke out the 30lb stuffer the 50lb mixer and the new smoke house this weekend to make 75lbs of sausage for a buddy , maiden voyage for the stuffer and the new smoke house

My issue is the stuffer

…..At first,  I thought about using a cheater pipe

…..LOL….but I know it shouldn't be that hard to move the handle

…. We stuffed less than 5ft, when I decided to pulled the meat out and remixed it adding a quart of water to the mix

. The mix was a lot softer, but it still took more effort that I thought it should to move the handle

…….. I have a 11lb stuffer and have never experienced anything like this with it...... If anyone else has a 30lber, do you have this problem with yours ? I was going to add more water, but I didn’t want to create a soup either…..any thoughts??

My son said the he read reviews on the larger stuffers like these and it said that they say that you should only use them for making summer sausage or something large with them….. I really think that’s hard to believe…… So I'm looking for someone that may have some experience with one..... Any advice will be greatly appreciated

SB, afternoon...... The bigger stuffers usually have a larger diameter piston which converts to.... more energy required from your arm to push the meat through the stuffer nozzle... Larger nozzles need less pressure.... Soooooo, you son was spot on... l have read the same from members here.... 5# stuffers work better for smaller sausages and nozzles....
On another note, did you grease the meat cylinder and o-ring with Crisco or something similar..... A dry o-ring on a dry cylinder can create a lot of friction..... If your stuffer has 2 speeds, was it on the slow speed.... that makes a difference also....

DaveOmak, Now that I think about it, I did NOT lube the O-ring, but I did spray everything with some cooking spray pretty heavy, the inside of the tank and tube. I know I had it in the low gear also....I bought the thing from a buddy and was not sure if it was defective or maybe he damaged the gears or something. I opened the gear housing and looked around, nothing looks bent or broken, so I guess I’ll be looking for a motor for this baby or a stronger son.....LOL  All in all it was nice to have such a larger capacity, the effort was a little much though…… ShoneyBoy
 
Last winter my brother brought his 20lb Kirshner when we were making a lot of sausage. It did work good for stuffing summer sausage but when we started stuffing sheep casings he started using my old Enterprise because it was much easier to crank. The Enterprise does not have an o-ring and that is why we think it turned easier. He said he was going to try stuffing sticks at home without his o-ring to see how it worked but we never talked about again.
 
I know Joe (Boykjo) has a 30 lb'r (motorized) he brought to the S. FL. Gathering... He said he can't stuff sticks with it because it's to hard on the motor and gears... If he wants to make sticks with it he has to take the motor off and use the hand crank.... just saying... the smaller the tube the harder it is to crank.. but of coarse that's common knowledge... what size tube were you using ?

I was using a 7/8" tube....... I have heard from more than one person about not trying to stuff snack sticks with a large stuffer..... But I was using a 7/8" on this monster and thought it would have done it easier that it did......ShoneyBoy
 
maybe ask the previous owner If he has ever change the o-ring.... might have and could be the wrong size (to big) making it hard that way.. I dunno.. just throwing suggestions out there...
