I love hot food, the hotter the better. I've left places with chapped lips and burnt tongue and throat, loved every minute of it.

My wife on the other hand, thinks a pinch of pepper can be too hot.

So this brings me to the post, I'm looking for a good pork rub that is medium heat so she can eat it and I can enjoy some heat.

I'd like something with a little kick to it but not too bad, if anyone has any ideas.

For a scale, like I said, my wife uses very little pepper as it can be too hot. She has said before that V8 spicy hot juice is too hot. I on the other hand soak everything in texas pete and am perfectly happy. My favorite thing in the spice cabinet is crushed red peppers, I think it makes everything better.

Try this... It is Mild and compliments different style sauces well...If you want spicier increase Blk Pepper to 1T and add 1T Wht Pepper and 1T Mustard powder. This is a good place to start for your wife. I am in the Same Boat that is why I use this. There is, however, Hotter Texas Pete  always at arms length. There is lots of room to play here and remember Black and Chile Peppers mellow as they are cooked so if the Rub taste Slightly too Hot for the Mrs., all should be perfect after the Cook... Anything else, just ask...JJ
