I've been smoking some Trail Bologna using Backwoods seasoning from Lems. I bought a Bradley smoker and have had fair success.

Having always been a fan of good ring bologna, I found this site while seeking a good recipe. As store bought bologna isn't even close to the real thing, I went looking for something good. Did find a recipe that had half deer and half pork sausage but it called for a lot of tenderquick and I thought it was pretty salty and greasy. Still looking. Did find the recipe from Nepas for Amish Ring Bologna. Will be giving that a try as soon as I get a shipment of casings. Thanks for the great site and already have learned a lot.  Gary
