Afternoon everyone. Roger here...been in the Navy for about 18 years and have been stationed in the Hampton Roads, VA area for almost all of it. I have always loved the amazing taste and consistency of smoked meats and unlike everything else in life I have decided that I need to try it myself. 

I look forward to reading through the forum pages here and can't wait to give smoking at home it's first try...TODAY!  I bought an ECB and all the stuff do start mod-ing it at Home Depot on Thursday. 

My intention is to season it this morning and start with something easy soon afterwards.  Any ideas at what I should try first?

Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!

If you are new to smoking, start with some chicken, cheep, easy and hard to mess up.  Welcome to the forum. I started with an ECB myself, turned out some pretty good BBQ.

One of the 1st things I did, was a meatloaf. Add whatever you want inside, throw in your smoke wood of choice and go at it. We all know what hamburger / ground beef normally taste like, and like the mentioned chicken is darned hard to screw up. You get a good idea of the particular wood flavor, and it is cheap to cook. Just a thought.
 
Welcome to the site!  Many, many great folks on here with great info, unfortunately I'm not on of them when it comes to smoking.  Just a newb myself

But...

I can say that you shorted yourself by staying in the Norfolk area all these years.  Did my first tour there back in the early 80's and couldn't wait to get out of there.  Spent my entire career moving around the country on different platforms and areas within the Navy. 

Bad part was never being able to put down roots until I retired a few years ago.  Now those roots will be ripped up as we are planning on moving yet again, FOR THE LAST TIME, sometime this year.
 
Thanks for the welcoming gestures and ttime around recommendations. I smoked some chicken wings earlier this week and they were awesome.

AJ...i understand what you are saying but, from Norfolk I've had the chance to visit almost 40 countries so far and have been able to let my wife and kids enjoy planting their own roots.
