I saw on a documentary a Nunavut native drying fish without salting. He just took the fillets off the fish , cut slits across down to the skin, washed it (in the river) then hung to dry in open air for a few days. Does anyone have more knowledge on this? Or other "ancient" preservation or cooking methods?
