Nasty day, time for sausage

    Lousy weather. Seams like a good time to try that Boudin I've been wanting to.
    I cut up a 6# butt into pieces; 2# for my Boudin & 2# for the wife's breakfast sausage and freezed the rest.
    After looking at about a millíon different recipes for Boudin I settled on one
    After getting it all together, I got the stuff in the pot. Then we made breakfast sausage for the Mrs.
    Time for mixing and stuffing...
    By the way, between my simmering, the wife's ham 'n beans and the Oak in the fireplace, the smells in the house are intoxicating!!
    After stuffing, I laid them in a tamale pot I had from when I was into Mexican to finish.
    They came out pretty good, except for a blowout that was easily cleaned up by my fingers. Tasty!
    It's just a matter now of packaging and/or freezing. This is the first time I've ever tasted Boudin, it just sounded really good and I'm glad I did! Thanks to all the folks who post their ideas on this site!

    Well you said nearly everything but....... did you like it? It looks like boudin to me.

    Does it go well with a cold brew? Does it help ya forget how chilly it is outside?

    Still working on linking myself, Richie! One link came untwisted while steaming but I saved it. I even bought some of those little clips that K-Dude mentioned in your post just in case. Thanks for looking and for points!
    And yes, Foam, I liked it a lot! One of the links shucked it's skin in the steamer so I just ate it with my fingers. Having never had it, I was a little worried. About the only thing I've found that doesn't go with a cold brew is chocolate cake...

    Only someone from S Louisiana would know if it goes good with a brew....hahahah...what happened to those LSU Tigers yesterday,,,dang..

    Back to the boudan, I may just put that on my to do list as i like it, just never made any.

    Well I love listening to the commentators making excuses but bottom line Miles has made his teams out of freshmen and sophmores and then sells 'em off to the pros. He's made it known he does it so he can intrest all those star High School players. This is what happens when you do that. a world class running back that can't buy a blocker and a quarterback that has no sense of the game. They keep talking about the 2 national champs from last decade but the never mention the coaching then. Nearly that entire staff went on to head coach at major schools. Defense Bo Peloni, head coach Nebraska, Defense Muschamp Florida, Offense Jimbo Fisher Florida State, etc etc..... We had a great Defensive coach and we let TA&M buy him. T A&M is famous for buying LSU Coaches. Track Coaches, swimming coaches, golf coaches, etc..... Then there is the recruiters and strength and conditioning..... LOL Sabin he's smart, he buys 'em back after they exhibit the Peter Principle. That's when you are elevated to one level above where you are competent. LOL..... its the new and exciting world of college athletics

    Boudin is a great snack or meal. Goes with anything, is always at the right temp to eat, and is conveniently handy (accessible) in all circumstances. Did I forget how tastee it is also?

    What hijack? The sports banter is all Greek to me, but it's good to see people having a good, friendly time! That's what it's all about here....

    Where did you get the suction cups that you are using as the feet for your sausage stuffer? That's a really good idea!! Would love to see a closer picture of them! Sausage looks great!

    The Mrs. got them after watching me struggle with a manual grinder. They didn't really help with the grinder (We now have an electric), but with a washer they work great with the stuffer!

    I too like the idea of the suction cups on the stuffer!
