The grand finale! The meat was incredible!!!! As juicey as I have ever had with a nice not too smokey flavor. Jeff's rub lightly applied had a good balance and the carolina mustard sauce was a great finish.
A very yummy meal! Thanks to all who rode through it with me on here. It was nice to have that confirmation that things are indeed going right. The advice given was dead on. Plateau temps and times were almost to the second. Once through the plateau the temp went right where it needed to be. A long slow cook on The wicked baked beans was perfect. I need a larger smoker so I can have the beans in there catching all the melty goodness from the brisket. Thanks again to everyone for this site, the advice, recipes and support. I have learned tons and will continue to do so. I hope to teach and share as well.

The spread. Everyone was saying they were full from the hotdogs (rolled in jeffs rub and grilled, TASTY!) for lunch and the abt's that were the mid day app. Once they saw the food plates were filled once more and bellies were stretched.
Well, if we all rule, then that means we must make the rules, therefore I suggest the new rule is that whenever you smoke, we get invited to your place!
