I have smoked four times in my uds since I have built it so far I am happy with the results I'm having. The only thing is when I'm smoking I have to have my ball valve completely closed to keep my temp under 250.
 
Air leak around the intake valves would be my guess
 
That's what I was thinking I used a floor flange to attach the intake pipe and think that is where the leak is.
 
Tell us more about your fire buildOMG process. My valves, lid leak like crazy and I have no problems keeping the heat down.
 
I fill the fire box with charcoal light four to six briquettes let it come to temp then add wood chips just before adding the meat.

You should try using chunks and the minion method. Chips flare up, burn up and are gone in minutes. This is why the temp is so high I would guess. Also could be you need to seal around the lid and intakes with high temp RTV. I have been out of chunks before and had to wrap my chips up in foil with some holes poked in it for a little air. They don't burn up like crazy and last much longer.
