With the right seasoning..NOTHING beats a whole bird cooked directly over smokey coals. It doesn't get better..guaranteed

Oh remember UDS don't change temp on a a dime..it's kind of like steering the titanic...but you'll figure it out.
Just start slowing it down about 25-50 degrees from your target temp
