Found a 5 lb. boneless picnic shoulder and had some mix from High Mountain sitting on a shelf taking up space so figured why not? lol. Followed the directions, place in a zipper bag and marked the day on the calendar. Now comes the hard part, waiting.

Patiently waiting for the finished pics, Dawn. I haven't tried buckboard bacon yet so I'll wait to see how yours turns out before I try it.

Dawn,
We should be rounding home about the same time. I have two 8 pounders curing. Today is day number 8 on my 11 day wait. I'd smoke mine on Sunday, but nothing gets between me & my Eagles on Sunday !
So I should be finally smoking my first BBB on Monday.

Hey Dawn how close are we to seeing this piece of meat turned into some fine looking bacon. Come on spill the beans whats the plan

After soaking the meat in cold water for 2 hrs, I patted it dry and let it sit out for an hour while I got the smoker ready.

In the smoker it goes.


I'll keep you posted.
 
After 2 hrs of smoke at 200, using white oak.



After reaching an IT of 140, it sat in the smoker for an hour, then brought in, bagged and in the fridge till tomorrow. Smells wonderful.
 
is this not worth the wait Dawn
BBB is kinda on top of my list now.
i've done 4 now 2 cbp 1 maple & 1 plain
cbp wins so far but gots to try some other flavors
yours looks good let us know how you use it.
