My take on cowboy beans. With QView

    OK I got a feather in my cap to try my hand at baked beans.  

    So here is the basic recipe. 

    2 C pinto beans rinsed and pressure cooked to about of 90% of suggested cook time.

    1 medium onion diced

    1/2 lb. bacon cubed 

    2 cups my wifes amazing BBQ sauce

    1/2 cup dry mustard

    1/2 cup brown sugar

    2 cups pork chunks (cooked down from rib trimmings)

    Pressure cooked the beans and drained them.  

    In my dutch oven I browned the bacon and set it aside, cooked down the onions added the bbq sauce, brown sugar and mustard added back the bacon and simmered.  

    Mixed the beans in and simmered them for about 10 minutes.  

    At this point it was good but it wasn't quite right.  Kept thinking it was missing something big.  To my right was the pot of the mornings coffee that was very dark and strong.

    Ok, what the heck.  I added 2.5 cups to it and letter simmer for about five minutes.  The taste was dead on.  the key was coffee.  Who knew?

    I smoked it with the ribs for about 2.5 hours.

    There were no beans left at all.  I will be making this again.  I think it may be the best use for rib trimmings yet.
