My stuffed pork loin

    Pork loins were on sale, so I got some, and picked up a cut end to butterfly and stuff. Got it split, stuffed and on the smoker.Basted a couple of times with a rasberry chipotle sauce. Pulled off at 150. Some fancy tater tots, and grilled romaine lettuce with a onion & bacon vinagrette with peppercorn ranch dressing.

    That's an awesome looking loin and plate o' food, my friend! Forget bacon and eggs this morning!!

    The romaine is only grilled long enough to brown the one side (cut side). Only a minute or so!

    Hmm... interesting stuffing there. Is it just me... and I had made one a bit ago...are these loins are fast becoming the cousin of the Fatty? Not that that's a bad thing :{)

    I have some raspberry chipotle rub...it is da mn tasty!
