This time I just rubbed it and threw it into the smoke.
It's been on for 5 hr's now, and it just hit the 150* mark.Smoke temp is running right at 245*

more Qview to come.


seem's like every time I smoke a picnic it's over 100* in the shade, here in Cali.
It's gonna be a long night AGAIN !!!!!..............LOL.

Long nights are made better by bbq. What part of Cali? And it looks like we will get a major break in weather monday. That will be a great day to smoke.

LOL......I guess really don't sleep more then a few hours at a time any way's, due to a hammered back and neck.

I think that gonna be a long night ahead of you but it will be more then worth it at the end of the long trail. Keep it up
 
Plateau is just around the corner, if not already here...hang in there!

Mmm...bringin' back some meories of the couple I've done so far...your plateau may be alot shorter than one I had...seems like 6-3/4 hours stalled out...I had burner control valve issues at the time...temps were sub-freezing and it snowed 3 times that evening...almost busted my butt on iced-over deck stairs...ended up running the smoker at 205* or something like that, just to keep it from spiking into the upper 200s range...wicked long night on that one...17 hours start to finish on a 9 or 9.5 lbr, seems to ring a bell.

Yours will be alot less time running the temps you have...should be a nice smoke. The rub looks like its forming a pretty decent bark already...nice color, too.

I'll have to catch up with you Sunday after work for the finish...great start, man!

Your right !
Smoke is hold'in steady at 250* the pig has hit the wall.
(stalled out at 167*) 9 hours into the smoke.

I'm going to foil this one when it hit's 170-175* go'in to keep the heat on it until internal temp reaches 200-205* then put it to bed in a blankie in the ice chest for a hour or so.

If it's anything like my first picnic it should be ready to eat for sunday supper.(I hope.....LOL )

Yeah, your almost to easy street! Got the right way to finish and rest it up before it goes under the fork...sounds perfect!

Right before I foiled at 173* and stuck it back in the smoker.
I might actualy get a little nap now.

She made to 203*in 13 hours ,and now is sleeping with a nice warm towel in a cooler..........Good night,I'll post up one more picture after I get some rest and after I pull it.

Sorry about the late picture............Sunday supper was a big hit !
After doing my first picnic in a brine and heavy B.suger rub.
I really don't think all of those steps where worth it.
My second picnic pretty much taste the same , some say it was better then the first...........I still have a few more sandwiches to decide........lol
Actualy I won't be brining ,my third picinc.
