My next cooker is a huge Santa Maria.

I was debating on what my next cooker was going to be for next year. I have a decent amount of offsets and I love smoking my meats in the various cookers. However I seem to keep going back to my first love which is the Santa Maria. I have a wonderful attachment called Gabby's grill that goes on top of a Weber kettle. Which is fine for the back yard but not for the big family gatherings and competitions. It does cook differently and even a smoke ring if you do it right. Yes, it burns a little more wood but it also cooks faster. But what I do get from it is that magic smoke coming back up into the meat from the drippings hitting the wood coals. I plan on designing it this winter and doing a custom build this spring. I want a 36x72 single level.
 
Next year I may build my outdoor, dream kitchen on the side of our house. A Santa Maria grill will definitely be in the design. Santa Maria grills are all I see the BBQ guys use at the county/state fairs.

I see people with the Weber one and some have the rotisserie option. . Guess that would be an ok accessory to have

well that's California....beware of the wind with these things. They are sorta worthless if winds are swirling.
 
Oh, I know. Our wind is predominately either from the north or south. The area for the outdoor kitchen will be on the north side of our house, between two houses to block the wind. It will include a gabled roof with powered vents to exhaust the smoke. There's enough room to have a u-shaped kitchen with an island. Just might have to include a bar and hot tub, but probably not.
