I got a brand new Thermoworks Thermocouple TW8060 and used it for the first time yesterday.  Since it was a birthday present, I went all out and got the PRO BBQ kit.  It was expensive, but buying the kit brought down the price a little.  I have to say, I was pretty pleased with the result.  Monitoring the true smoker temp and the IT simultaneously was pretty amazing.  Incidentally, I found that the analog thermometer on my smoker door was off between 10-30 degrees throughout the course of a six hour smoke (the analog read a cooler than actual temp).  There is also a max/min temp memory and the ability to set an alarm if the temp rises or falls too much.  Overall, after one smoke I am very happy with the purchase and I can't wait to use it again.

New toys are fun!  I bought myself a Therma pen for mine when they were on sale.  Love it!

No. I just stuck the ambient temp probe through the top vent and the other probe went right into the meat. Instructions basically said to just wash before and after use. One complaint is the equipment was lacking some basic instructions... the thermocouple was well documented but it assumed you know what to do with the probes. Did you seal yours? How? Is there a benefit? I assumed the probes should be fairly corrosion resistant.

I used heat shrink very cheap and easy never applied it before and it's so simple. I cut a 2" section pushed it over the wire/probe connection and warm it with a lighter till it shrinks I also put a dab of Loctite 567 on both ends of the heat shrink.
That is a great idea - I will give that a try. I have gone through several probes over the years and it is always that joint that goes.
 
I used the 300 degree rated there is higher rated available. I saw no deformity even when I was at 320. If your in the 350 range get the higher rated heat shrink.
