Hows that for a roll call?

I posted my 1st in the meet section. I am originally from Texas, so I know how to smoke and I have been doing so for about 30 years or so. But I still have stuff to learn. Life is a journey. Its all about learning.

If you think you have it all down, you dont. Me, I feel life in life, Im just about ready to start kindergarten. I still have lots to learn. Goes for smoking too.

Anyway, I came up here to get married to my wife. I live in Idaho now. I smoke Turkeys, Chicken, and Brisket. I dont have any experience with steaks, though Id love to try it.

I dont have any experience with fish ether.

Smoked Turkey is the best. I use breat only cause we dont like dark meat. I inject em with a concoction of butter, onion powder, garlic powder, and lots of other spices. Then I let it marianate a day or so. Then onto the smoker it goes.

The white meat turns out very juicy and tender.

Well, its time for Church. So I had better talk to everyone later.

I have actually thought about teaching a class on smoking. Im not an expert by far. But there are a lot of people around that have no clue about it, but love the results.
