I have a bad time remembering to get picture of my smokes.
I just get going and suddenly, dang, I forgot to get a picture of that step.
Well, this time was no exception.
Found some scotch eggs on here and had to try them.
First I hard boiled the eggs, got them perfect, should have left them a bit underdone.
By the time they were cooked in the smoker they were just a bit overdone.
I took one pound of JD regular sausage and started trying to wrap it around
the eggs, I'm not the guy for that job.
Mrs Gear to the rescue.
Put in a bit of Swiss cheese with each egg.
Made seven of these little beauties.
Next up was stuffed mushrooms, messed these up pretty badly.
Don't ask why, but I cooked the sausage before mixing it with some Swiss
cheese and Italian seasoned bread crumbs.
I stuffed everything That I could get in them.
Had to use toothpicks to hold them all together.
Here they all are getting ready to settle in for a two hour nap in the smoke at 225
Eggs are done.
If you look close see the edge of the yolks are just starting to be green
that's why I will undercook a little bit next time when hardboiling.
You can see the cheese coming out of the egg on that one.
Now the main course.
Y'all been wondering why this fool put this in the pork section.
These ribs were cooked for about six hrs at 225
They were not foiled at all.
Came out pretty decent.
