Hi all. I hope you all had as good a weekend as I did. Great weather and great company.

My Q-View is a little lame because I had a lot to do and hungry guests. I had to use my phone.

I did my first 3-2-1 ribs. They were awesome but I think it's time i pony up and buy Jeff's rub recipe. They were missing something.

I also did my first ABT's. Cabot cheddar, hot dog sliver and bacon. (Side note, wash hands well before using the rest room)

Also on the menu was a Fatty. I got a little carried away with this one. One Pound of ground pork, one pound of ground venison seasoned. Stuffed with sauteed spinach, onion, shitake mushrooms and garlic. Cabot cheddar, and marinara sauce. It was a bit large! The weave didn't turn out so well. Thick bacon too, so it didn't crisp too well. It's all I had on hand.

Here are the ribs. They spent their 2 hours in foil and last hour out of foil on the propane grill with a foil pack of hickory chips while the fatty and ABT's were on the ECB

I thought I had some pics of these sliced but I can't find them.

Anyway, Things I learned.

1-Always use thin sliced bacon.

2-Electric ECB does not play nice when there is a slight breeze.(Could barely keep it at 200 Degrees so I improvised)

3-Electric ECB does not have enough real estate to smoke for a small crowd.

4-WEAR GLOVES WHEN HANDLING HOT PEPPERS!!!!!!

5-Get started on the smoker build. Barrel is in the garage waiting for a welder.

6-Don't spend all day prepping and cooking food for a party and not eat! I only tasted a few pieces. I was too concerned making sure everyone had what they needed that I didn't have time to sit and eat myself. Oh well. There are some leftover ends and fatty in the fridge so I will get to eat that this week.

All in all it was a good day. Horse shoes and BBQ. a few beers and good Friends.

Glad your day went well.

Sounds like you learned a lot on this smoke, i would guess the "most" important lesson was the gloves

Awesome pullback on the ribs, looks like they would fall apart getting them out of the rack!

Thanks a lot everyone! The best thing about smoking, in my opinion, is the trial and error. It gives me an excuse to buy more meat and keep tryin.
Everything looks great.As for not eating.I take quality control samples from everything as i smoke it .It's for everyones good.

I did get a little taste of a few things, just not everything I made. I think I took on a little too much. LOL I'm an overachiever.

These were by far my best ribs. Just need to get that rub recipe.  
 
Looks awesome and agree to #4, especially if you have to go to the mens room, funny story I will not share
